Low Calorie Mojito – Just in Time for Summer

After receiving a lot of hits for our low calorie margarita and with summer coming on it seems appropriate to do another low calorie alcoholic drink. Personally, my favorite beverage in the summer months is a cool and refreshing Mojito. The way I used to make Mojitos (doubling up on the rum and using a devilishly sweet simple syrup made with real sugar) costs the drinker about 300-400 calories per beverage. We’ve recently stumbled upon a great recipe from reality TV star, Bethenny Frankel’s, diet food blog, and after a few small adjustments we have a great tasting drink that remains true to the traditional Mojito and comes in at only 200 calories.

Here’s what you need to begin:
1 Lime
2 Tablespoon Sugar Substitute (we like Truvia for it’s super sweet taste and lack of aspartame)
6-8 Mint leaves
Club Soda
Clear Rum
Lots of Ice

Slice up your lime into wedges, toss about 3 into a tall glass, and next add the sugar substitute and the mint. Do about a 6 second pour (or an amount of your choice, remember each 1.5 ounces is about 100 calories – 1.5 ounces equals about a 3 second pour or a bar jigger) of your choice in rum and begin muddling (take a blunt tool, muddler, and mush up the mint and limes, your aim is to bring out the flavor and juices in these items while also dissolving the sugar). Add enough ice to come to the rim of the glass and then add club soda to taste, mix everything together. Garnish with a lime and a mint sprig.
 
Everyone has their own preferences in alcoholic drinks so change up the ingredients as you see fit until you find a taste that works for you! The only calories that count in this drink come from the rum so feel free to indulge as much as you want!
